Instead of funding someone to run the club p/t from the playing budget could we fund it from the coaching budget. Do we really need all the coaching staff that we have?

No but Gray said that he comes with his coaching staff. Reading between the lines I think Gray was asked to consider cutting his staffing budget more than he was told he had to lose £80k off playing budget (Cost of non-playing budget is almost identical to the overall budget cut requested) and that is what has irked him more.

What has happened to the early bird season ticket money it has never been mentioned how many were sold and how much went into the playing budget. I know me and my mate bought one

No, it seems to be fluctuating a bit - it's back up to £15k now.

Could be some people have withdrawn, or switched it over to the BTB fund to help get that up a bit quicker. It could also happen that someone wants to change their amount but they have to delete their existing pledge first.
